Twice Baked Potatoes

4 baking potatoes

¼ c soft butter or margarine

1 c creamed cottage cheese

2T Mayonnaise

Salt and Pepper to taste

½ c grated American or Cheddar cheese



Bake at 400°F for one hour. When done: cut a thin lengthwise slice from the top of each potato. Scoop out insides and add to a bowl filled with other ingredients. Blend thoroughly. Pile filling high back into shells leave tops rough. Sprinkle with grated cheese then paprika.

Bake at 450°F for 10-12 minutes, until cheese melts and potatoes are heated through.
