Peanut-Ginger Chicken

What you’ll need:

  • 3 lb. chicken breast cut into strips, or just chicken tenders
  • ½ cup hot water
  • ½ creamy peanut butter
  • ¼ cup chili sauce
  • ¼ cup soy sauce
  • 2 tbsp. cooking oil
  • 2 tbsp. vinegar
  • 4 cloves garlic, minced
  • 2 tsp. grated ginger root or ½ tsp. ground ginger
  • ¼ tsp. ground red pepper


In a small mixing bowl gradually stir hot water into peanut butter. Stir in the chili sauce, soy sauce, the 2 tbsp. oil, the 2 tbsp. vinegar, the garlic, ginger, and red pepper. Put chicken in a large plastic bag set in a large bowl. Pour marinade mixture over chicken. Seal bag and turn to coat chicken. Refrigerator for 12 to 24 hours turning thee bag occasionally.

After chicken has marinated, prepare grill. Remove chicken from marinade and grill till done. Serve with hot rice and top with salsa if desired.

For Salsa combine and chill for 1-2 hours:

  • 1 cup chopped fresh fruit (peaches, nectarines, pears, or plums)
  • 1 cup chopped, seeded cucumber
  • 2 tbsp. thinly sliced green onion
  • 2 tbsp. snipped parsley or fresh cilantro
  • 1 tbsp. sugar
  • 1 tbsp. cooking oil
  • 1 tbsp. vinegar
