Chicken Cacciatora

What you’ll need:

  • 3 T vegetable oil
  • 1 chicken (3 lbs) cut up
  • 1 medium onion, sliced
  • 3 garlic cloves, minced
  • ½ lbs mushrooms, sliced
  • 1 lg bell pepper, cut into 1 in pieces
  • 1 can (16 oz) tomatoes
  • 1 can (8oz) tomato sauce
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp freshly ground pepper
  • 1 can of olives


In a large frying pan, heat vegetable oil over medium heat. Add chicken and brown on all sides, about 10 minutes. Remove and drain on paper towels

Add onion, garlic, mushrooms, and bell pepper to pan and saute until onion and pepper are softened, about 5 minutes. Add remaining ingredients. Stir well.

Return chicken to apn. bring to a boil; reduce heat. Cover and simmer 30 minutes, until chicken is tender.
